The beach soul...

AHOY! 
When I was much younger, we lived very close to the beach, it was beautiful. I use to spend alot of my time on the beach, or around the beach area, heck, I was born in a hospital where you could hear the ocean from our room, being just a stones throw away from the sandy shore. I would go to the Dolphinarian show, which is now uShaka Marine world. And I thought I was going to become a Dolphin saving marine biologist or a Marine Diver, id live on a boat house in the dock and go to work in flip flops and board shorts, eat calamari for lunch and watch the sunsets while nibbling on pineapple (My Fav!). Mmmm... those dreams were dashed the moment we moved inland when I was in matric (I fought the inland move but destiny had other plans for me I suppose), but that Ocean feeling has never left my soul, and given half a chance, I think Id move back.

 So today I decided would be a great day for a lovely beachy recipe, some nice "Caribbean" breaded pork chops.

This recipie is awesome because its quick, cheap, simple, and deliciously beachy!

Caribbean Breaded Pork Chops
 Beachy things we will need:
  • 4 Pork Chops
  • 1 dash Cayenne Pepper 
  • 1 teaspoons salt
  • 1/2 cup breadcrumbs
  • 1/4 teaspoon pepper
  • 1/2 cup flour
  • 1 tablespoon vinegar
  • 1/4 teaspoon fresh chopped thyme
  • 1 egg
Cooking Instructions:
Season pork chops in a bowl using salt, pepper, vinegar, thyme and Cayenne Pepper. Allow to marinate for 3 hours. Beat egg in a bowl. Then combine flour and breadcrumbs. Dip each chop in egg and then coat on both sides with breadcrumb mixture. Place in greased baking pan and bake at 160 c  for one hour . Serve hot.
